Pretty much unknown, except that the Princess should find him immediately attractive. Also, he's probably "not from around here," as he's been searching a long time for an appropriate princess to marry, as he's much too royal to marry anyone but a princess, and none of them were good enough. The story specifically mentions a turban, and you need it for a game puzzle, so you might want to use that as guidance. I even tried visualizing him as being Indian or Arabian, but I'm not sure. I'd like to see some different ideas.
This suggests he's a bit haughty. And we see that indeed, he probably needs to learn something about caring for other people, too. In the story ending (and several game endings) he has to voluntarily agree to sacrifice his life to help the Princess. In the story ending, he is rescued, and they live happily ever after (although he doesn't make it in one or more game endings). I guess he's transformed by his love for the Princess.
Of course, the Prince is also the player character -- he's the one who has all the puzzles to solve, so he's a natural choice. He will interact with the player -- so there will be a lot of simple animation/voice pieces where he shrugs, says "I can't do that" and so on. Hopefully we can make those entertaining as well.
He also sings a lot. This is kind of a fairy tale tradition, but it's also kind of funny. There is the seen at the end, when he's slowing drowning to save the Princess, and she says to him:
"Sing again, prince. It makes it less tedious," said the princess.
One of the silly game endings has him give up and become a folk singer, but that's another story entirely....
